Blue Agave nectar is a delicious, natural sweetener preferred by health-conscious people for use in foods and beverages. It has a low glycemic index rating, making it ideal for those with special dietary needs and those who wish to avoid sucrose or artificial sweeteners.

The Blue Agave is a plant grown in Mexico similar to cactus. It contains nutrients and inulins (naturally occurring oligosaccharides) that are healthy for your digestive system.

Young Living agave is made differently than most agave sweeteners. Most agave sources are made from the starchy root of the agave and goes through a “refining” process. The process often also uses caustic acids, clarifiers, filtration chemicals, etc., in the conversion of agave starches into highly refined fructose inulin that is usually higher in fructose content than high fructose corn syrup. In addition, much agave has added refined fructose.

The organic Agave nectar made by Young Living is very different. The nectar is pressed from the Pina or heart of the plant and filtered using a triple cold filter process followed by a very gentle low heating filtration process, for the purpose of slowly evaporating extra liquid.

This filtering processes is not considered a refining process. Filtration is used only to filter out extraneous particles from the Agave nectar. Refined products end up with a good portion of the natural sugar components removed, which is not the case in this filtration process. In this filtration process, most of the vitamins, minerals and enzymes are retained

How to Use Blue Agave
Organic Blue Agave is much sweeter than sugar, but with a glycemic index of only 25 (sugar has a glycemic index of 68-85). In recipes, use 1/2 to 3/4 cup in place of 1 cup sugar. You may also need to reduce the amount of liquid, just as you would for honey. Use like honey in beverages or on cereal, bread, etc.
